Oy10-0LC is essentially derived from Summit. Oy10-0LC is distinct from Summit by missing the high molecular weight glutenin subunit (HMW-GS) Oy10 protein. The lost of HMW-GS Oy10 seed storage protein rendered the derived dough to exhibit faster mixing time to peak height. Oy1 O-OLC's morphological phenotype is essentially similar to Summit.
