Narrative

The seeds are light gold, flowers red, leaves green. The RRC class type is: mercado. It is used as a vegetable when young and is very short. Observations from the Rodale Research Center, 1988 Rodale Amaranth Germplasm Catalog. Emmaus, PA. Cultivated by Warihio Indians. Used as a leafy vegetable during early stages (3-5 weeks) and as grain for pinole, tole, and tamales.
